Moong Dal Khichdi
The classic one-pot comfort meal — rice and yellow moong dal pressure-cooked with mild spices. Light, protein-balanced and gentle on digestion, which is why it appears on so many dietitians' charts.
Ingredients
- 1/2 cup yellow moong dal, rinsed
- 1/2 cup rice, rinsed
- 1 tsp ghee
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric
- 1 pinch asafoetida (hing)
- 1 small tomato, chopped
- 3 cups water
- Salt to taste
- Fresh coriander to garnish

Rinse the dal and rice together until the water runs clear; soak for 15–20 minutes if you have time.

Heat ghee in a pressure cooker. Add cumin seeds and hing; let the seeds splutter.

Add the tomato and turmeric; sauté for 2 minutes until soft.

Add the drained dal-rice mix, water and salt. Stir once.

Pressure cook for 3–4 whistles (or 12 minutes in an electric cooker). Let the pressure release naturally.

Stir to a soft, porridge-like consistency, adding hot water if needed. Garnish with coriander and serve warm.
