Masala Oats with Vegetables

Ingredients
- 1/2 cup rolled oats
- 1 tsp oil
- 1/4 tsp mustard seeds
- 1/4 cup chopped onion
- 1/2 cup mixed vegetables (carrot, peas, beans), chopped small
- 1 small tomato, chopped
- 1/4 tsp turmeric
- 1/2 tsp pav bhaji masala or sambar powder
- 1.25 cups water
- Salt to taste
- Fresh coriander to garnish

Dry-roast the oats in a pan for 2 minutes until lightly fragrant; set aside.

Heat oil in the same pan; splutter the mustard seeds, then sauté the onion until translucent.

Add the mixed vegetables and 2 tablespoons of water; cover and cook for 3–4 minutes.

Add tomato, turmeric, masala and salt; cook for 2 minutes.

Add the roasted oats and water; simmer uncovered for 3–4 minutes, stirring, until the oats are cooked but not mushy.

Garnish with coriander and serve hot.
